Mexican Dip Ole

Every 4th of July, my friend always wants to have a get together at our house. It is not because of my good cooking, I am sure, nor the size of my house which is of moderate proportions. I believe it is because I live close to the park where the fireworks are displayed every year.


We can sit in the lawn chairs on the front porch and driveway and merrily watch the fireworks with all the conveniences a few steps away — much preferable to watching the fireworks in the park, looking up above for the whole duration of the firework show which can be a strain on the neck, not to mention the inevitable bug bites.
It took me a while to make up my mind because it would mean that I would have to spend my one and only day off in 3 weeks cleaning, shopping, cooking, serving, running around, and feeling exhausted by the end of the night. Was I up for the challenge? Well, since July the fourth is a day for family fun, I thought it would be a good treat for family and friends–a fabulous way to enjoy Fourth of July festivities.
Initially, I only invited three Filipino couples because I planned to have fun, too, spend time with my friends and not slave the day away. Little did I know that my daughters also invited their friends the last minute. So that meant I had to prepare some dishes that would cater to their picky teeners. And I knew just one dish that would be a hit for them — Mexican Dip Ole.

Ingredients:
1 can (31 oz) fat-free refried beans
1 (16 oz) sour cream
1 envelope mild taco mix
4 medium sized avocados
1 small can sliced olives
1 big cube tomato (chopped)
3 sticks of green onions (chopped)
1 cup finely shredded cheese (combination of cheddar and monterey jack cheese)
Procedure:
Spread the refried beans evenly on the pan. Mash the avocados. Add two teaspoons of taco mix, 1 teaspoon of lime or lemon juice. Layer on top of the refried beans. Mix the sour cream with two tablespoons of taco mix and spread on top of the avocado mix. Sprinkle tomatoes, olives, green onions, and cheese. Chill before serving. Best served with tortilla chips or crackers.

My girls love this dip too, so I always keep a can of refried beans in the pantry for when the urge hits. It’s a great idea for a no-fuss party

hi chats, i was saving the recipe for the PMN hehe. if you want it a bit stronger, you may add more of taco mix powder to the sour cream. kids love it just as much.

but I was thinking of making this for me and hubby. Sayang, I thought we could use chili con carne instead of the tomato and beans and save some cooking and chopping time 
Such posts as this one inspires me to try cooking, or at least whipping up something for my family. Who knows, one day cooking will be one of my activities?

I love tacos, burritos, and other spicy hot yummies. I should try your mexican dip recipe … as soon as i know where to get refried beans (is there a substitute for it). You must be a whiz at the kitchen as well as with the cam.
